Executive Chef

Classification: Leadership, Salaried

The "owner" of all things food. Manage and implement systems to ensure profitability, consistency and best practices are always being adhered. The ability to organize and direct various functions of operations, along with dealing with guests and staff in a fair, rational, equitable, and professional manner.

 

Reporting to the Director of Operations, the Executive Chef will work simultaneously with back of house and front of house staff to lead and supervise, ensuring successful and effective execution of daily operations, events, and various functions within Central Standard Crafthouse & Kitchen.

 

The ideal candidate is organized and detail-oriented, has previous restaurant catering experience, is an effective problem solver, a strong leader, and someone who takes initiative to ensure the experience for our guests and employees are at their best.
Essential Duties/Responsibilities:

 

This list of duties and responsibilities are not all-inclusive and may be expanded to include other duties and responsibilities as management may deem necessary from time to time.

 

DAILY:

  • Total guest/employee satisfaction
    Meet or exceed labor thresholds by writing an intentional schedule on a weekly basis
  • Coach teammates to excel in their roles, empower and develop leaders in their own departments
  • Provide corrective action for staff regarding proper systems and procedures.
  • Conduct line checks and recipe audits for menu items to ensure consistency
  • Hold pre-shift meetings with staff to ensure smooth, efficient service
  • Ensures that all staff are well groomed and in proper uniform in accordance with health and serve safe standards
  • Assist FOH management team with ongoing projects to successfully operate the business
  • Create relationships with vendors and effectively order product that is affordable and high quality
  • Update FOH management on current menu counts, 86ed items, menu changes, ingredient changes, etc.

 

WEEKLY:

  • Manage BOH schedule and budget accordingly based on sales
  • Attend weekly management meetings and contribute solutions to topics such as marketing, event execution, training, scheduling, inventory, etc.
  • Create a plan for weekly BEOs and events for the following week & month

 

MONTHLY:

  • Review monthly P&L with management team outlining successful initiatives and areas of opportunity
  • Review and update menu recipes and inventory
    Cost audit Product Mix and coordinate updates with Toast
  • Review menu for seasonal content updates
    Hire, train and retain quality staff who excel in hospitality, creating an effective and proactive work culture

 

Financial Accountability:

  • Follow all target margins for labor, COGs and overall sales goals at Crafthouse
  • Budget weekly expenses to ensure positive cash flow for venue
  • R&M: maintain existing equipment through routine cleaning, routine maintenance and preventative measures to ensure full working capacity and longevity
  • Misc spending: minimize frivolous spending and encourage team ownership of common places and general upkeep of the facility and equipment

 

Job Requirements:

  • Flexible working hours including early mornings, nights and weekends
  • Occasional long hours required
  • Excellent Management/supervisory experience
  • Prior catering & restaurant operations experience
  • Strong leadership skills and the ability to create an effective work culture
  • Ability to work under deadlines
  • Experience using TripleSeat Event Management
  • System and Toast POS preferred

Education and Experience:

  • Minimum three (3) years of leadership experience in private dining, banquet, and/or catering sales; restaurant/hotel industry preferred.
  • ServSafe Food Handler certification
  • Reliable transportation

Event Sales Manager

Classification: Managerial, Salaried, Bonus and Commission Structure
Supervisor: Director of Operations, General Manager

Anticipated Start Date:  November 15, 2022

 

The Events Sales Manager is responsible for formulating, leading, and implementing strategies to grow revenue through events and event planning. The position solicits and produces income-generating events, maintaining relationships with clients and vendors, managing budgets, and managing staff. This position involves controlling and supporting event operations, restaurant operations, and overall hospitality within Central Standard Crafthouse & Kitchen.

  • Provide excellent hospitality and maintain a strong professional relationship with clients as well as management teams.
  • Respond to all calls and inquiries within a 24-hour time period and track all communication with potential clients.
  • Advise and make sales recommendations to clients while creatively suggesting what we offer at Crafthouse & Kitchen to accommodate the client.
  • Act as a liaison between clients, restaurant management, and all event operations.
  • Negotiate and prepare banquet event orders with clients ensuring accuracy using TripleSeat Event Management System.
  • Attending weekly manager meetings, communicating upcoming events and details with restaurant management team.
  • Maintains accurate service charge disclosures and ensures accuracy and inclusion on all contacts, menus, and itemized receipts.
  • Time management includes warm and cold calls to potential clients and new business development.
  • Assist in developing a sales plan to market future events including specific tasks with timelines. Identify, acquire, and build relationships with new accounts.
  • Learn and exhibit full knowledge of all things Central Standard including service standards, mission statement, products, and operations.
  • Work within a budget to help maintain financial requirements and the ability to control a profit and loss statement within events.

The Crafthouse will include tasting room bar, restaurant, merchandise sales, distillery production area with tours, private event spaces and rooftop patio. High volumes with lots of opportunity are expected. We are seeking fun and outgoing people to join our team for both part- and full-time bartenders.

Server Job Responsibilities and Expectations:

  • Serves patrons with food and beverages in a positive and friendly manner.
  • Protects establishment and patrons by adhering to sanitation, safety, and alcohol beverage control policies.
  • Helps patrons select food and beverages by suggesting courses, explaining the Executive Chef’s specialties, identifying, and suggesting appropriate beverage pairings, and answering food preparation questions.
  • Transmits orders to bar and kitchen by recording patrons’ choices and identifying patrons’ special dietary needs and special requests.
  • Serves orders by picking up and delivering patrons’ choices from bar and kitchen and delivering accompaniments and condiments from service bars.
  • Maintains table setting by removing courses as completed, replenishing utensils, refilling water glasses, and being alert to patron spills or other special needs.
  • Obtains revenues by totaling charges, issuing bills and accepting payments.
  • Perform basic cleaning tasks as needed or directed by fellow team members.

Dishwasher

Job Details:

Central Standard Craft House & Kitchen is looking for a dedicated, organized dishwasher who enjoys working as part of a team in a fast paced culinary environment. The Dishwasher’s duties include washing soiled plates and flatware in a high temp dish machine, restocking items, cleaning appliances and machines, empty and clean trash receptacles, and other duties, as needed such as mopping and assisting with cleaning areas in the entire restaurant.

To be successful as a Dishwasher, you should be a committed, communicative team player with excellent time management skills. You should be able to prioritize tasks in a busy setting and adhere to all food safety regulations and procedures.


Essential Functions:

  • Wash glassware, pots, pans, silverware and plates, among other utensils/objects.
  • Understand and know how to use a dish machine.
  • Know how to use a three compartment sink.
  • Know how to properly use and distinguish different cleaning chemicals.
  • Work at a fast and efficient pace.
  • Take direction from the chefs and line cooks.
  • Be able to deep clean above and below all surfaces.
  • Be able to organize efficiently.
  • Know how to handle sharp objects.
  • Have good time management skills.
  • Sweep and mop well.
  • Work well with other staff in a high volume work environment.


Physical Functions:

  • Ability to stand/walk a minimum of 8 hours or as needed.

Essential Job Functions:

  • Preparation and execution of dishes and recipes to a high standard is required in conjunction with maintaining cleanliness and safety protocols.
  • The Line Cook is required to set up, maintain, and execute menu items as directed by the Executive Chef or Sous Chef.
  • Communicate clearly with the Chef of any product needs related.
  • Prep food products. Use proper rotation, first in first out, checking for quality, preventing food waste.
  • Assist the Chef in managing the standards for food handling, sanitation, and safety procedures according to the Chef’s specifications.
  • Cultivate and maintain professional relationships with all other employees through a positive and team-driven work effort.
  • Arrive as scheduled for shifts and all meetings.
  • Daily duties may also include but are not limited to unpacking and stocking kitchen deliveries, as well as assigned cleaning duties.
  • Maintain uniform cleanliness and proper attire at all times without exception.

Experience / Skills:

  • Excellent knowledge of cooking terms, techniques, and recipes.
  • 2-6 years’ kitchen experience preferred.
  • Ability to lift and carry up to 50 lbs.
  • Serve Safe Food Handlers Certificate.
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, procedure manuals, and recipes. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or fellow employees.
